There are a lot of kinds of papaya salad. In different regions of Thailand has its own signature style of papaya salad.

Som Tum Thai (ส้มตำไทย)
This one is the original papaya salad. The main ingredient is of course raw papaya. But nowadays they add a little bit of carrot in to create more color in the dish. And they will put in a little of long bean and green eggplant. Then top up with a few dried shrimp and roasted peanut.
The taste of this kind of papaya salad is sweet, sour slightly spicy and a little bit of salty. This one can count as one of the healthy food. It contains low calories with very very low fat.
I personally like this kind of papaya salad the most, when I was young, during the day-off my mom will take me to a local papaya salad nearby my house and then we order this and eat it together with our family at home. It’s the gathered lunch with happiness. Those are the most beautiful family memories for me.
Som Tum Pu Plara (ส้มตำปูปลาร้า)
This one has similar ingredients to Sum Tum Thai but they add fermented fish into the salad. This kind of papaya salad is very very popular in Thailand, especially in the Isaan region. The taste is more on salty and spicy. The scent of fermented fish is the signature of this kind of papaya salad. Many people especially Isaan people won’t like papaya salad if fermented fish is not added.
You should try at least once, but I warn you first, the scent is very strong. But after you try it once, you may not able to stop eating it forever.
Tum Sua (ตำซั่ว)
The two main dishes that we eat with papaya salad is sticky rice and rice noodles. Sometimes we just add rice noodles into the papaya salad directly. This kind of papaya salad calls Tum Sua. Tum Sua goes well with both with and without fermented fish.
If the spiciness of the papaya salad is too much for you to handle, the rice noodles does help a lot to ease up the spiciness in your mouth and on your lips. Tyr it at least once!
Tum Tang (ตำแตง)
Aside from papaya, Thai people also use some other main ingredient for this kind of food. Cucumber is one is that. Cucumber is moisture by itself when making it as cucumber salad, it gives another feeling and texture. Cucumber also goes well for both with and without fermented fish.
For those who don’t want to eat raw papaya, cucumber is the choice you should try. Moreover, cucumber contains high vitamin E which is good for your skin too.
Tum Tua (ตำถั่ว)
Another ingredient that can be used to replace raw papaya is asparagus bean. The asparagus beans go better with fermented fish. The scent of the bean maybe a little strong for someone. But for me I think it smells good too. And because of the scent of the beans, it goes better with strong scent of fermented fish.
